Breakfast Fit for Royalty

 Yesterday was grocery shopping day, which is generally a day feared. It's expensive, and it's kind of chaotic. People are running about, old people stand in front of the cat food for 10 years. Ya know, it's a mess.

But I was excited to go today! As I've said for the past three weeks Jenn was here and well . . .  Jenn is kind of a picky eater. So, to be easy I didn't get anything too exciting while she was here. I stuck with basics for breakfast. And I stayed with pizza pockets (yuck) for lunches. So going grocery shopping yesterday was kind of exciting. Because I was able to get what ever I wanted. The one thing that I missed more than anything while she was here is my favorite breakfast food scrambles not just scrambled eggs and cheese. I go all out for this shit! Because it's the first meal of the day.  

 We went to the local farm stand and I bought all the necessary things to make the best scramble. Bell peppers (Red, Yellow, and Orange), onions (walla walla sweet), and mushrooms (craminie). And obviously I bought some other fruits for snacking such as apples and peaches. Yum! I love Summer time. Jay's always has the best produce. 

And right when we were about  to leave, we were in line to buy our produce I saw this beautiful sign. I think it was glowing, but that might of just been the hope in my little heart. It was grapes for 1.99LB and for grapes around here, that is awesome. And I snagged up a big bag of grapes  because I knew they would pare perfectly with my scramble. And to end the suspense , YES, it was a wonderful scramble. So wonderful I will share with you the not so technical recipe because, hmmmm. We might want to make it again. Yummy!



The Missed You Scramble. 
Ingredients:
1/4 cup assorted bell peppers
Handful of diced yellow onion
4 small mushrooms
Handful of mixed greens (rainbow shard, Kale, and baby spinach)
Small bunch of cilantro
1/2 of a Serrano pepper (seeded/ deveined)
1/2 cup of mixed cheese (peppered jack, Colby jack, and sharp cheddar) 
3 large from my chicken's ass eggs
A splash of milk
A pinch of garlic powder
Shake of seasoned salt
A dash of kosher salt
Olive Oil (for cooking)

And then I prepared it as you would. I chopped up the bell peppers into decent sized strips so there would be hunks of bell pepper through out the scramble and I deseeded and took the veins out of a Serrano (they're hot guys!) pepper and diced it up. I hadn't had them before but my mom warned me that they were warm, and they were but not too bad. Added a nice kick! and I diced up the yellow onion, green would be nice in this as well! 

I put a curly-Q of oil into a hot pan and sauteed the peppers and onions together until they were nice and wilty (very technical). Then add the mushrooms, and repeat the wiltyness. But here's the fun part! Adding the greens.

I slid the pan off the heat, as it was nice and hot at this point. And put in my greens and cilantro (didn't really cut the greens or cilantro just took the stems out). And covered it until the greens wilted down and looked less like a salad and more like a breakfast. 

The rest, as has all of this been is self explanitory. Sprinkle salt/garlic powder over the vegetable mix. Add whipped up eggsand cook to your liking (I don't like mine wet.), and follow with your choice of cheese. To keep it jazzy I used  peppered jack cheese, and Colby Jack. But you could use whatever your little heart desired. 

Once melted I put it on my plate all cute with cilantro as a garnish, and two bunches of grapes and took some pictures.


Now I sit and sip my coke and wonder whether or not this wind will die down so that I can take a walk. 

Working on my cover letter today. Woop-de-doo-dah. 

And maybe I'll get some knitting in. Oooh. That'd be a plan.

Now i'm out diet coke and it's too early for a second one. Poop on that one.
